How the Glycemic Load Formula Works

Glycemic load (GL) combines the quality and quantity of carbohydrates in one number. The formula is simple:

GL = (GI × carbohydrate grams per serving) ÷ 100

The glycemic index (GI) ranks foods from 0 to 100 based on how quickly they raise blood glucose compared with pure glucose. Cauliflower is a non-starchy vegetable with a low estimated GI of about 15.
